HONEY NUT CAKES FOR MABON 1-1/2 C. cottage cheese 1-1/2 Tbl. sifted flour 1/4 tsp. salt 3 Tbl. sour cream 3 egg yolks, slightly beaten 3/4 C. honey 1 Tbl. butter 1 Tbl. lemon juice Grated rind of 1 lemon 1/2 C. wheat germ 3 egg whites, stiffly beaten Put cheese through a strainer to break up the curds. Combine cheese with next 9 ingredients. Mix well. Fold in beaten egg whites. Butter a 9 inch square cake pan; sprinkle the bottom with more wheat germ. Pour batter into pan and top with 1/8 C. wheat germ and 1/2 C. chopped nuts. Bake at 375 degrees for 30 minutes.
