MABON BREAD HONEY AND WHEAT POTATO BREAD 1 (1/4 oz) pkg dry yeast 1-1/2 C. warm water 5 to 5-1/2 C. white flour 2 C. whole wheat flour 2/3 C. butter, softened 1 C. warm mashed potatoes 2/3 C. honey 2 eggs 1-1/2 tsp. salt Dissolve yeast in warm water; let stand 10 minutes. Add 2 C. white flour, whole wheat flour, butter, potatoes, honey, eggs, and salt. Beat until smooth. Stir in enough remaining flour to make dough easy to handle. Turn dough onto floured surface; knead until smooth and elastic. Place in greased bowl; turn greased side up. Cover; let rise until double in size. Punch down dough; divide in half. Shape each half into loaf. Place each into greased 9x5-inch loaf pans. Cover; let rise til double in size. Bake in 350 degree oven for 25 to 35 minutes, or until golden brown. Brush tops with melted butter.
