************************* ***** Iced Mint Tea ***** ************************* Categories: Summer Solstice Number of Servings: 4 INGREDIENTS ------------------------------------------------------------ 1 cup mint leaves, pressed down 2 tbs. loose tea (or two tea bags) 2 strips lemon peel 4 cups boiling water 1/2 cup granulated sugar (optional) 1/3 cup lemon juice ice cubes 4 lemon slices 4 fresh mint sprigs DIRECTIONS ------------------------------------------------------------ In medium bowl, combine mint, tea and lemon peel, and cover with the boiling water; let steep 15 minutes. Strain and stir in sugar; cool completely and mix in lemon juice. To Serve, half fill 4 glasses with ice cubes, add mint tea and garnish each glass with a lemon slice and mint sprig. ********************************** ***** Strawberry Lemon Crush ***** ********************************** Categories: Non-alcoholic fruit Number of Servings: 2 INGREDIENTS ------------------------------------------------------------ 1 cup hulled strawberries 1/2 cup sugar 1/2 cup lemon juice 1 1/2 cup cold water ice cubes two unhulled strawberries, or mint sprigs DIRECTIONS ------------------------------------------------------------ Place hulled strawberries in blender or food processor. In bowl combine sugar, lemon juice and 1/2 cup of the water, stirring until sugar dissolves. Add to berries; puree gradually adding the remaining water, until mixture is smooth. Serve over ice cubes and garnish with unhulled berries or mint.
